The No Bread Parmesan Crusted Chicken

When I started eating to one whole-food diet while, I discovered wheat germ. Wheat bran is a delicious nutty flavor and is the heart of the wheat kernel. It is also very nutritious and contains fiber, folate, phosphorus, magnesium, zinc, vitamin E and thiamin. Wheat germ is a heart healthy alternative to bread crumbs.

Before I did not notice that the bag said it could be used in place of breadcrumbs, I tried it when I chicken parmesan for about a yearbefore. I was addicted, and no longer use myself, the breadcrumbs in any recipe.

The following recipe is that I made recently and used wheat germ instead of bread crumbs.

Ingredients


2 without bone, skinless chicken breasts
1 cup wheat germ
2 tablespoons freshly grated Parmesan cheese
1 / 2 tablespoon Italian seasoning
2 egg whites
1 / 2 tablespoons olive oil
1 1 / 2 tablespoons butter
2 tablespoons capers
1 / 2 tablespoons Dijon mustard
Juice of 1 / 2 lemon
2 tablespoons chopped freshParsley
Salt and pepper (optional)


Combine wheat germ, Parmesan cheese and Italian seasoning in a bowel.
In a second bowel easily beat the egg whites.
Chick Cover with plastic wrap and use a flat dinner club and pound chicken 1 / 4 inch thick.
Season chicken with salt and pepper.
Dip chicken in egg whites and then into the breading "mix to create a uniform layer
Oil on medium heat in large cast iron frying pan
Add chicken and cook for 3-4 minutes, until crust is golden brown.Turn and cook for another 2-3 minutes or until chicken is fully cooked. Let chicken rest.
In the hot pan, add butter, stir in the capper, mustard and lemon juice, scraping with a wooden spoon to brown spots, turn off heat.
Serve chicken with sauce drizzled on top of it

The first time I did this I had a side-fried baby spinach and fresh chopped garlic. I also have a small baked sweet potato with it as a page but had also.
